Summer Recipes // Sponsor Spotlight

Summer brings an abundance of fresh produce. From peaches to rhubarb to corn and tomatoes, during the summer months, I enjoy purchasing produce that is not only in season, but also local.  Choosing local foods means you're getting delicious food that is good for you, good for your family and good for your local community.

Here in Ontario, June 6 to 12 is 'Local Food Week' a chance to celebrate the bounty of produce,  dairy, meat and seafood options available in my area. This year, I will be celebrating by making some of my favourite recipes and snacks, all made with local, in season ingredients. 

I could go on and on and on listing my favourite summer recipes, but here are my top 3...

01. Beefsteak Tomates - Slice tomatoes into wedges. Drizzle with olive oil and season with a bit of salt and pepper. The perfect afternoon snack!

02. Grilled Salmon with Lemon & Herbs - I love to support the local fishing industry, and enjoy eating seafood that is sustainable caught, like salmon. Simple salmon recipes are always the best - top with a little fresh lemon and dill and toss on the BBQ.

03. Strawberry Rhubarb Crisp - Made just like everyone's favourite apple crisp, but with a strawberry-rhubarb substitute. The perfect dessert for a summer BBQ!

What are your 3 favourite summer recipes?
01. Tomato, Avocado, and Cucumber Salad -- Chop up equal amounts of each and add either Italian or Ranch salad dressing. Prep and put in fridge for 30 minutes or so for a cool treat on a hot day! 

02. Cheese and Steak Pitas -- Take one pita and place a handful of Angus steak strips (already cooked) and a handful of the shredded cheese flavor of your preference on top (I use the four cheese Mexican blend). Microwave for 30 seconds or until cheese is melted. 

03. Grilled Veggies -- Usually I'll grill carrots or bell pepper with zucchini on a mini indoor grill to change it up when I'm not in the mood for a salad. Instead of soy sauce, I add some coconut aminos for flavour.
